Method

Mix the lemongrass, fresh ginger, garlic, turmeric powder, curry powder, palm sugar, soy sauce, vegetable oil, and salt into a paste.

Coat the chicken thigh with the marinade, cover, and refrigerate for at least 30 minutes. Thread the pieces evenly onto skewers.

Grill the chicken skewers over medium-high heat, turning often, until browned and the chicken thigh reaches 74°C (165°F).

Combine the coconut milk, peanut butter, tamarind paste, chili paste, and water in a pan and simmer until smooth.

Stir in the crushed peanuts and cook until the sauce thickens slightly, then finish with the lime juice.
