- 120gBilimbi (crushed)
- 150gOnion (finely chopped)
- 10gGarlic (crushed)
- 20gGreen Chili (finely chopped)
- 30mlLime Juice
- 15mlVegetable Oil
- 8gSalt
- 2gBlack Pepper
- 1.2lWater

Method

Place the shark in a saucepan with the water and simmer until it reaches 63°C (145°F) and flakes easily.

Drain, cool until safe to handle, and flake very finely, removing all skin and cartilage.

Heat the vegetable oil in a frying pan. Add the onion and cook until soft.

Stir in the garlic and green chili and cook briefly.

Add the shark and bilimbi and cook, stirring often, until fairly dry and concentrated.

Season with the salt, black pepper, and lime juice and serve warm or at room temperature.
