    Salted Cod (rinsed)

Soaking

    Water (cold)

Poaching

  • 500g
    Plantain (peeled and cut into thick pieces)
  • 400g
    Cassava Root (commercially processed, peeled, and cut into chunks)
  • 400g
    Breadfruit (peeled and cut into chunks)
  • 1.2l
    Water

Ladob

  • 700ml
    Coconut Milk
  • 150g
    Onion (finely chopped)
  • 10g
    Garlic (crushed)
  • 20ml
    Vegetable Oil
  • 2g
    Salt (only if needed)
  • 2g
    Black Pepper

    Cover the fish with the soaking water and refrigerate for 8 hours, changing the water once.

    Drain the cod, transfer it to a saucepan, and add the poaching water. Simmer until it flakes easily, then drain, remove any bones, and flake.

    Bring the water to a boil. Add the cassava root and boil for 15 minutes, then add the plantain and breadfruit and cook until nearly tender. Drain and discard the cooking water.

    Heat the vegetable oil in a large pot. Add the onion and cook until soft, then stir in the garlic.

    Add the coconut milk, cooked roots, and salted cod and bring to a gentle simmer.

    Cook until the roots are fully tender and the coconut sauce has thickened.

    Season with the black pepper and taste before adding the salt, then serve hot.
