Fish

    Red Snapper (cleaned and scored)
  • 15g
    Garlic (crushed)
  • 30ml
    Vegetable Oil
  • 8g
    Salt
  • 2g
    Black Pepper
  • 5g
    Fresh Thyme (finely chopped)

    Heat a grill to about 220°C (425°F).

    Mix the garlic, vegetable oil, salt, black pepper, and fresh thyme into a paste.

    Rub the paste over the red snapper, into the cuts, and inside the cavity. Refrigerate for 15 minutes.

    Grill, turning carefully once, until the skin is lightly charred and the thickest part reaches 63°C (145°F).

    Serve with the limes and lemon wedges.
