- 160gCarrot (cut into batons)

Method
Follow each step in order. Ingredient names are highlighted as you go.

Mix the all-purpose flour and salt. Add the water and vegetable oil, knead until smooth, then cover and rest for 30 minutes.

Heat the ghee in a large pot over medium heat. Add the onion and cook until softened.

Add the lamb shoulder and brown it on several sides.

Stir in the tomato, tomato paste, cumin powder, turmeric powder, black pepper, salt, and bay leaves.

Pour in the water, cover, and simmer until the lamb is tender.

Add the carrot, zucchini, eggplant, and okra and simmer until nearly tender.

Roll the dough to about 2 mm (1/16-inch) thick and tear or cut it into small sheets.

Slide the dough pieces into the simmering stew one at a time, stirring gently after each addition.

Cook until the dough is tender and the stew has thickened slightly. Remove the bay leaves before serving.
