Dough

- 170mlWater
- 5gSalt
- 25mlVegetable Oil
Filling
- 350gGround Lamb
- 130gOnion (finely chopped)
- 8gGarlic (crushed)
- 3gCumin Powder
- 3gCoriander Powder
- 2gBlack Pepper
- 6gSalt

- 600mlVegetable Oil

Method

Mix the all-purpose flour, water, salt, and vegetable oil until smooth. Knead briefly, cover, and rest for 30 minutes.

Add the ground lamb to a skillet and cook until it begins to release its fat. Add the onion and garlic and continue cooking until the onion is soft.

Continue cooking the ground lamb until browned and it reaches 71°C (160°F).

Season with the cumin powder, coriander powder, black pepper, and salt, then cool completely.

Roll the dough thin, cut it into small circles, add the filling, fold, and seal the edges firmly.

Heat the vegetable oil to 175°C (350°F).

Fry in batches until deep golden and crisp, then drain well.
