Dough
- 300gSemolina Flour (fine)
- 150gAll-Purpose Flour
- 80gPowdered Sugar
- 220gUnsalted Butter (melted and cooled)
- 80mlWhole Milk
- 3gCardamom Powder
- 2gCinnamon Powder

- 250gDate Paste

Method

Mix the semolina flour, all-purpose flour, powdered sugar, cardamom powder, and cinnamon powder.

Add the unsalted butter and rub it through the dry ingredients. Cover and rest for 30 minutes.

Add the whole milk gradually and mix just until the dough holds together.

Shape the date paste into small balls.

Wrap each ball with dough and press it into a ma’amoul mold or shape it by hand.

Arrange on a lined tray and sprinkle with the sesame seeds if using. Heat the oven to 180°C (350°F).

Bake until set and pale golden underneath, about 15 to 18 minutes, then cool completely.
