Method

Place the chicken in a pot with the onion, bay leaf, cardamom powder, black pepper, salt, and water.

Bring to a gentle boil, cover, and simmer until the chicken reaches 74°C (165°F). Lift it out and keep warm.

Add the white rice to the broth and cook until very soft.

Pour in the whole milk and cook over low heat, stirring often so the rice does not catch.

Continue cooking until thick, creamy, and spoonable.

Stir in the unsalted butter.
