Method

Heat the oven to 180°C (350°F). Oil a 23 x 13 cm (9 x 5-inch) loaf pan.

Combine the all-purpose flour, cornmeal, breadcrumbs, baking powder, and salt.

In a second bowl, whisk the eggs, whole milk, honey, and extra virgin olive oil until smooth.

Stir the wet mixture into the dry mixture until no dry pockets remain.

Fold in the apple, fig, raisins, walnuts, orange zest, and lemon peel.

Spread the batter in the pan and bake until deeply golden and a skewer inserted in the center comes out clean, about 50 to 55 minutes.
