Method

Heat the oven to 160°C (320°F).

Cook the white sugar with the water until deep amber.

Immediately divide the caramel among heatproof ramekins and swirl to coat the bottoms.

Warm the whole milk until steaming but not boiling.

Whisk the eggs, white sugar, and vanilla extract until blended without making excessive foam.

Slowly whisk in the warm milk, then strain the custard into the ramekins.

Place the ramekins in a roasting pan and pour in the hot water until it reaches halfway up their sides.

Bake until the edges are set and the centers still wobble slightly, about 40 to 45 minutes.

Cool at room temperature for no more than two hours, then cover and refrigerate until thoroughly chilled.

Run a thin knife around each custard and invert onto a plate.
