Method

Bring the water to a boil, add the tapioca pearls, and cook until mostly translucent with only tiny pale centers remaining.

Drain the tapioca well and keep the pearls warm so they do not clump.

Place the brown sugar in a saucepan over medium heat and cook until melted and deep amber.

Remove the pan from the heat and slowly add the coconut milk, taking care because the mixture will bubble vigorously. Return it to low heat and stir until smooth.

Add the salt and simmer gently until the sauce thickens slightly.

Fold in the tapioca and serve warm or at room temperature.
