Pudding
- 180gWhite Rice (rinsed)
- 1lWater
- 60gCocoa Stick (finely grated)
- 400mlCoconut Cream
- 80gWhite Sugar
- 2gSalt

Method

Bring the water to a boil in a saucepan and add the white rice.

Reduce the heat and simmer until the rice is very soft.

Stir in the grated cocoa stick and cook until it dissolves into the liquid and the pudding turns evenly dark.

Add the coconut cream, white sugar, and salt and simmer gently, stirring often, until thick and spoonable.

Serve warm, or cool promptly and refrigerate for a firmer pudding.
