Heat the vegetable oil in a heavy pot over medium heat.

Add the chicken thigh pieces skin-side down and brown them on both sides, then transfer them to a plate.

Add the onion and garlic to the pot and cook until softened.

Pour in the coconut milk and season with the salt and black pepper. Return the chicken to the pot.

Cover and simmer gently until the chicken thigh pieces are tender and reach 74°C (165°F).

Remove the pot from the heat, stir in the lime juice, and serve hot.
