Method

Heat the vegetable oil in a wide pan over medium heat.

Add the onion and cook until softened, then stir in the garlic and green bell pepper.

Add the tomato and tomato paste and cook until the tomatoes break down and the sauce thickens.

Stir in the fresh thyme, bay leaves, hot sauce, water, salt, and black pepper, then bring the sauce to a gentle simmer.

Add the spiny lobster pieces to the simmering sauce and cover the pan.

Cook just until the lobster meat is opaque, tender, and reaches 63°C (145°F).

Remove the bay leaves and thyme stems, then squeeze the lime over the pan.
