Conch

    Conch Meat (cut into pieces)

    Lime Juice
  • 20g
    Colombo Spice Blend

Sauce

  • 30ml
    Vegetable Oil
  • 150g
    Onion (finely chopped)
  • 15g
    Garlic (crushed)
  • 1pcs
    Scotch Bonnet Chili (finely chopped)

    Fresh Thyme (whole)
  • 200g
    Tomato (finely chopped)
  • 40g
    Tomato Paste
  • 300ml
    Coconut Milk
  • 400ml
    Water

    Combine the conch meat with the lime juice, colombo spice blend, salt, and black pepper. Leave it to marinate while you prepare the pot.

    Heat the vegetable oil over medium heat. Add the onion and cook until softened, about 5 minutes.

    Add the garlic, scotch bonnet chili, and fresh thyme and cook for 1 minute.

    Stir in the tomato and tomato paste and cook until the mixture darkens slightly and smells sweet, about 5 minutes.

    Add the marinated conch meat and stir well so it is coated in the spiced tomato mixture.

    Pour in the coconut milk and water and bring to a gentle simmer at about 95°C (203°F).

    Cover and cook at a gentle simmer until the conch meat is tender and the sauce is rich, 60 to 90 minutes, stirring occasionally.

    Taste and serve hot once the conch is tender.
