Line a tray or large plate and set it aside.

Place the brown sugar and water in a saucepan and bring to a boil over medium heat until the syrup reaches about 118°C (244°F).

Stir in the desiccated coconut, cinnamon powder, ginger powder, and salt and cook, stirring, until the mixture is thick and glossy.

Remove the pan from the heat and stir in the vanilla extract and lime juice.

Drop spoonfuls of the mixture onto the lined tray and leave them to cool completely until set.
