Green Bananas

  • 400g
    Salted Cod (rinsed)
  • 1l
    Water
  • 30ml
    Vegetable Oil
  • 120g
    Onion (finely chopped)
  • 15g
    Garlic (crushed)
  • 200g
    Tomato (finely chopped)
  • 1pcs
    Scotch Bonnet Chili (finely chopped)
  • 5g
    Fresh Thyme (whole)
  • 3g
    Black Pepper
  • 30ml
    Lime Juice

    Bring the water to a boil at 100°C (212°F), add the salt, then add the bananas and cook until tender, about 20 minutes. Drain and keep warm.

    Place the salted cod in the water. Simmer at about 95°C (203°F) until the fish flakes easily, about 15 minutes. Drain, remove any bones, and flake.

    Heat the vegetable oil in a frying pan over medium heat. Add the onion and cook until softened, about 5 minutes.

    Stir in the garlic, scotch bonnet chili, and fresh thyme and cook for 1 minute, until fragrant.

    Add the tomato and cook until it breaks down and looks saucy, about 6 minutes.

    Fold in the salted cod and black pepper. Cook for 2 to 3 minutes so the flavors combine, then taste before adding any extra seasoning because the fish may remain salty.

    Take the pan off the heat, stir in the lime juice, and serve the saltfish alongside the boiled green bananas.
