Combine the pork belly, garlic, lime juice, paprika, chili powder, black pepper, and salt in a bowl and mix well.

Heat the vegetable oil in a wide pan over medium-high heat.

Add the seasoned pork belly and cook, turning often, until the pieces are browned and crisp at the edges until the pork reaches at least 63°C (145°F), followed by a 3-minute rest.

Add the onion and continue cooking until softened and lightly golden.
