Dough

Method
Follow each step in order. Ingredient names are highlighted as you go.

Mix the all-purpose flour with the salt in a bowl. Add the egg and the water, then knead until the dough is smooth and firm. Cover and let it rest.

Combine the ground beef, ground pork, onion, salt, and black pepper until the mixture is evenly blended and slightly sticky.

Roll the dough thinly on a lightly floured surface and cut it into small rounds.

Place a little filling in the center of each round, fold the dough over the filling, and press the edges firmly to seal. Bring the two corners together to form the traditional dumpling shape.

Bring the water to a rolling boil in a large pot and season it with the salt.

Boil the dumplings in batches until they float, then cook a few minutes longer until the filling is fully cooked and the wrappers are tender and the ground meat filling reaches 71°C (160°F).

Lift the dumplings out with a slotted spoon and serve them hot with sour cream and fresh dill.
