Sauce
- 400gTomato (finely chopped)
- 30gTomato Paste
- 20gGarlic (crushed)
- 30gGreen Chili (finely chopped)
- 4gCumin Powder
- 4gCoriander Powder
- 20mlDistilled White Vinegar
- 8gSalt
- 20mlVegetable Oil
- 100mlWater

- 15gFresh Coriander (finely chopped)

Method

Heat the vegetable oil in a small pan over medium heat. Add the garlic and green chili and cook briefly until fragrant.

Add the tomato and tomato paste and cook until the tomatoes soften and the mixture begins to thicken.

Stir in the cumin powder, coriander powder, and salt. Add the water and simmer gently until the sauce is concentrated.

Stir in the distilled white vinegar and cook for another minute.

Blend the sauce until smooth, or leave it slightly coarse if preferred.

Stir in the fresh coriander just before serving.
