Mash
- 4pcsPlantain (peeled and thickly sliced)
- 20gGarlic (crushed)
- 120gPork Cracklings (crushed)
- 8gSalt
- 2gBlack Pepper
- 250mlChicken Stock (warm)
- 20mlExtra Virgin Olive Oil

Method

Heat the vegetable oil in a deep pot to 175°C (350°F).

Fry the plantains until tender and lightly golden, then drain well.

Pound or mash the hot plantains with the garlic, pork cracklings, salt, and black pepper until the mixture is cohesive but still slightly textured.

Add the warm chicken stock a little at a time to moisten the mash without making it loose.

Mix in the extra virgin olive oil for richness, then shape and serve while hot.
