    Heat the extra virgin olive oil in a saucepan over medium heat. Add the onion and cook until soft, then stir in the garlic.

    Add the tomato paste, paprika, and bay leaf and cook briefly, then pour in the blonde beer, tomato sauce, ketchup, mustard, Worcestershire sauce, and brandy.

    Simmer the sauce gently until it smells rounded and slightly reduced.

    Mix the corn starch with the water until smooth, stir it into the sauce, and cook until the sauce turns glossy and lightly thickened. Remove the bay leaf and keep the sauce warm.

    Season the top loin beef steak with salt and black pepper. Melt the unsalted butter in a skillet over medium-high heat and cook the steak until just done. In the same pan, cook the smoked sausage and chouriço sausage until hot and lightly browned.

    Build each sandwich with white bread, ham, the cooked top loin beef steak, smoked sausage, and chouriço sausage, then close with more white bread.

    Cover the sandwiches completely with the gouda cheese.

    Bake at 220°C (425°F) until the gouda cheese is melted and starting to bubble.
