Dough

- 220mlWater (warm)

Method

Mix the all-purpose flour with the salt. Add the egg and the warm water, then knead until the dough is smooth and elastic. Cover and let it rest.

Cook the potato until tender, then mash it while still warm.

Melt the unsalted butter in a pan, add the onion, and cook until soft and lightly golden.

Mix the mashed potato with the farmer's cheese and the cooked onion. Season the filling with the remaining salt and the black pepper, then let it cool.

Roll out the dough thinly and cut out rounds. Place some filling in the center of each round, fold the dough over, and press the edges firmly to seal.
