- 2.2lWater
- 150gOnion (chopped)
- 20gGarlic (chopped)
- 30mlAnnatto Oil
- 150gPeanut Butter
- 20gCorn Starch
- 300gEggplant (cut into large pieces)
- 250gLong Bean (cut into lengths)
- 200gBok Choy Cabbage (trimmed)
- 8gSalt
- 2gBlack Pepper

Method

Place the oxtail and water in a heavy pot and bring to a boil. Skim off any foam, then lower the heat and simmer until the meat is very tender.

Add the onion and garlic and cook until softened and fragrant.

Stir in the annatto oil and peanut butter until the broth becomes smooth and creamy.

Mix the corn starch with a little hot cooking liquid in a small bowl, then stir it back into the pot to lightly thicken the sauce.

Add the eggplant and long bean and simmer until tender.

Add the bok choy cabbage and cook just until wilted.
