    Vegetable Oil

    Fresh Ginger (sliced thinly)

    Garlic (chopped)

    Onion (sliced)
  • 30ml
    Fermented Fish Sauce
  • 1.8l
    Water
  • 400g
    Green Papaya (peeled and cut into wedges)
  • 80g
    Moringa Leaf

    Heat the vegetable oil in a pot over medium heat. Add the fresh ginger, garlic, and onion, and cook until fragrant and softened.

    Add the chicken and cook until the pieces lose their raw color on the outside.

    Pour in the fermented fish sauce and cook briefly so it coats the chicken and aromatics.

    Add the water and bring to a gentle boil, then lower the heat and simmer until the chicken is nearly tender.

    Add the green papaya and continue simmering until the papaya is tender and the chicken is at least 74°C (165°F).
