    Chicken Thigh
  • 80ml
    Soy Sauce
  • 80ml
    Cane Vinegar
  • 30g
    Garlic (crushed)
  • 3pcs
    Bay Leaf

    Black Pepper (coarsely ground)

    Water

    Combine the chicken thigh, soy sauce, half of the garlic, and the black pepper in a bowl. Let it stand while you prepare the pot.

    Place the chicken and marinade in a wide pot. Add the remaining garlic, bay leaves, and water, then bring to a gentle simmer over medium heat.

    Cover and cook until the chicken thigh is at least 74°C (165°F) and the liquid is fragrant.

    Pour in the cane vinegar and do not stir for the first few minutes so the sauce stays clear and well balanced.

    Add the white sugar, then simmer uncovered until the sauce reduces to a glossy consistency and the chicken is well coated.

    Taste the sauce and continue simmering briefly if you want it slightly stronger. Serve the chicken thigh hot with the sauce spooned over.
