Potato

- 40gAjí Amarillo Paste
- 60mlLime Juice
- 10gSalt
- 30mlVegetable Oil
- 2gBlack Pepper

Filling
- 300gCanned Tuna (drained)
- 80mlMayonnaise
- 120gRed Onion (finely chopped)
- 2pcsAvocado (sliced)

- 120gRomaine Lettuce (separated into leaves)

Method

Bring the water to a boil and cook the potato until very tender. Drain, then mash while still warm.

Mix the mashed potato with the ají amarillo paste, lime juice, salt, vegetable oil, and black pepper until smooth. Chill until firm enough to shape.

Combine the canned tuna, mayonnaise, and red onion in a bowl.

Line plates or a mold with the romaine lettuce.

Spread half of the potato mixture over the lettuce, then add the avocados and the tuna filling.
