Marinade
- 700gBeef Heart (trimmed and cut into 2 cm (3/4-inch) pieces)
- 60gAjí Panca Paste
- 40mlDistilled White Vinegar
- 15gGarlic (crushed)
- 5gCumin Powder
- 4gPaprika
- 3gBlack Pepper
- 8gSalt
- 30mlVegetable Oil

Method

Whisk together the ají panca paste, distilled white vinegar, garlic, cumin powder, paprika, black pepper, salt, and vegetable oil.

Add the beef heart and coat it well. Cover and marinate in the refrigerator for at least 2 hours.

Bring the water to a boil. Add the potato and cook until tender. Add the corn cobs near the end and cook until just tender, then drain.

Heat a grill or grill pan to 230°C (450°F). Thread the marinated beef heart onto skewers.

Grill the skewers, turning often, until browned at the edges and the beef heart reaches at least 63°C (145°F). Rest briefly before serving.

Serve the skewers hot with the cooked potato and corn cobs.
