Method

Cook the cassava root in the water until very tender, then drain well and mash until smooth.

Cook the onion over medium heat until softened, then add the garlic and cook briefly.

Add the ground beef and cook until browned, no longer moist, and its center reaches 71°C (160°F).

Season the beef mixture with the paprika, salt, and black pepper, then let it cool slightly.

Mix the mashed cassava root with the beef mixture and the egg until evenly combined.

Shape the mixture into small patties.

Heat the vegetable oil to 175°C (350°F) in a deep pan.

Fry the patties in batches until crisp and golden on both sides.
