  • 500ml
    Coconut Milk
  • 80g
    Palm Sugar (finely chopped)
  • 2g
    Salt
  • 500ml
    Water

    Rinse the sago pearls well.

    Bring the water to a simmer in a pot, add the sago pearls, and cook while stirring until they are mostly translucent.

    Drain the sago pearls, return them to the pot, and stir in the coconut milk, palm sugar, and salt.

    Cook gently, stirring often, until the mixture becomes thick and glossy.

    Briefly soften the banana leaves over a flame or in hot water so they do not crack.

    Spoon the sago mixture onto the banana leaves and fold them into neat parcels.

    Steam the parcels at 100°C (212°F) until the pudding is fully set and fragrant.

    Cool slightly before serving.
