Filling

- 150gOnion (finely chopped)

- 20gCulantro (finely chopped)
- 300mlChicken Stock

Method

Place the corn dough in a large bowl and gradually stir in the warm chicken stock until the mixture is smooth, soft, and spreadable. Set it aside.

Heat the annatto oil in a pot over medium heat. Add the onion and garlic and cook until softened.

Add the pork shoulder and cook until it is no longer raw on the outside.

Stir in the tomato paste, culantro, chicken stock, salt, and black pepper. Simmer until the filling is thick, the pork is tender, and the meat reaches at least 71°C (160°F).

Lay out a piece of banana leaf and spread on a layer of dough.

Top the dough with pork filling, then distribute the green olive and raisins evenly among the tamales.

Fold the banana leaves tightly around the filling to enclose it completely.

Arrange the tamales in a steamer over simmering water, cover, and steam until the dough is firm and the tamales smell fragrant through the leaves.
