    Preheat the oven to 220°C (425°F).

    Rub the chicken thigh with the extra virgin olive oil, salt, and black pepper. Roast until browned and the thickest pieces reach 74°C (165°F).

    Heat the extra virgin olive oil in a wide pan over medium heat. Add the onion and cook slowly, stirring often, until very soft and deep golden.
