Do not use a wild-caught or home-dressed bat. Keep the legally sourced fruit bat refrigerated and prevent contact between the raw meat and ready-to-eat foods.

Heat the coconut oil in a heavy pot over medium heat. Add the onion, garlic, and fresh ginger and cook until softened and fragrant.

Add the fruit bat, coconut milk, water, salt, and black pepper. Bring to a boil, then reduce to a steady simmer.

Cover and simmer until the meat is very tender and every thick piece reaches at least 74°C (165°F); extend the cooking time as needed.
