- 800mlCoconut Milk
- 140gBrown Sugar
- 2pcsEgg (lightly beaten)
- 2gSalt

Method

Preheat the oven to 180°C (350°F).

Warm the coconut milk in a saucepan over low heat. Stir in the tapioca pearls and cook gently, stirring often, until the pearls begin to swell and soften.

Add the brown sugar and salt and stir until dissolved.

Remove the pan from the heat. Slowly whisk a little of the hot mixture into the eggs to warm it gently, then whisk the egg mixture back into the pan until smooth.

Pour the pudding mixture into a baking dish and bake until softly set with only a slight wobble in the center.

Let the pudding cool slightly before serving.
