- 500gTomato (finely chopped)

Heat the vegetable oil in a karahi or wide skillet over medium-high heat.

Add the chicken thigh and cook until the pieces lose their raw color and begin to brown lightly.

Add the crushed garlic, crushed fresh ginger, tomato, green chili, cumin powder, coriander powder, chili powder, and salt. Cook, stirring often, until the tomato breaks down and the oil begins to separate around the edges.

Add the water, reduce the heat to a gentle simmer, and cook until the sauce coats the meat and the chicken reaches 74°C (165°F).

Stir in the garam masala and the julienned fresh ginger, then cook briefly so the aroma stays fresh.
