Stew

  • 600g
    Salted Cod (soaked and cut into large pieces)
  • 800g
    Potato (peeled and thickly sliced)
  • 250g
    Onion (thinly sliced)
  • 50ml
    Extra Virgin Olive Oil
  • 3g
    Black Pepper

Sauce

  • 700ml
    Tomato Sauce
  • 40g
    Tomato Paste
  • 150ml
    Water

    Make sure the salted cod has been soaked until pleasantly seasoned, then pat it dry.

    Heat the extra virgin olive oil in a wide pot over medium heat and soften the onion until translucent.

    Stir in the tomato paste, then add the tomato sauce and water and season with the black pepper.

    Layer the potato and salted cod into the pot, spooning some sauce between the layers.
