North Korean-Style Grey Mullet Soup

A North Korean-style clear fish soup made here with grey mullet, garlic, soy sauce, sesame oil, and scallion. It is presented as a regional-style variation rather than assigned the name of Pyongyang’s better-documented trout soup.

4 steps
  1. 01

Bring the water to a gentle simmer. Add the garlic, soy sauce, and salt, and cook briefly so the flavors blend.

  2. 02

Slip the mullet into the simmering broth and cook gently until the fish flakes easily and reaches 63°C (145°F).

  3. 03

Skim the surface as needed to keep the broth clear, then stir in the sesame oil.

  4. 04

Serve the soup hot and finish with the scallion, white pepper, and Korean chili flakes.
