Method

Bring the beef stock to a gentle simmer over medium heat. Stir in the dongchimi brine and salt, then remove from the heat and chill the broth until very cold.

Cook the buckwheat noodles in boiling water at 100°C (212°F) until tender but springy. Rinse them several times under cold running water and drain well.

Prepare the cucumber, Korean pear, and eggs.

Divide the buckwheat noodles among chilled bowls and pour over the cold broth. Top with the cucumber, Korean pear, and eggs.
