Batter

- 120gOnion (roughly chopped)
- 150gRed Bell Pepper (roughly chopped)
- 10gScotch Bonnet Chili (roughly chopped)
- 40mlPalm Oil
- 2pcsBouillon Cube
- 7gSalt
- 300mlWater

Blend the cowpeas, onion, red bell pepper, scotch bonnet chili, and water until very smooth and airy.

Stir in the palm oil, crumble in the bouillon cubes, add the salt, and mix until evenly combined.

Pour the batter into lightly greased heatproof bowls or cups.

Pour the water into a covered pot and bring it to a simmer. Set the bowls above the water and steam at about 100°C (212°F) until the pudding is firm and reaches 74°C (165°F) in the center.
