Toast the cornmeal in a dry pan over low heat until it smells nutty, then let it cool slightly.

Whisk the toasted cornmeal, cocoa powder, cinnamon powder, white sugar, and water together in a saucepan until smooth.

Cook over gentle heat, stirring often, until the mixture lightly thickens and reaches about 85°C (185°F).

Remove from the heat and stir in the whole milk and vanilla extract.

Chill the drink well, then whisk or blend until smooth and frothy.
