Method

    Preheat the oven to 200°C (400°F).

    Heat the vegetable oil in a pan over medium heat. Add the onion and cook until softened, then stir in the garlic.

    Add the ground beef and cook, breaking it up well, until browned and 71°C (160°F).

    Stir in the tomato paste, then pour in the beef stock and bring the mixture to a gentle simmer.

    Mix the corn starch with a little cold water to make a smooth slurry, stir it into the filling, and cook until the gravy is thick. Season with the salt and black pepper, then let the filling cool until just warm.

    Line pie tins or one large pie dish with the shortcrust pastry.

    Spoon in the filling, then scatter the cheddar cheese over the top.

    Cover with the puff pastry, seal the edges, and cut a small vent in the lid.
