Method

Melt the unsalted butter in a pan over medium heat, then stir in the all-purpose flour. Cook briefly until the flour loses its raw smell but does not brown.

Gradually whisk in the warmed beef stock until smooth and thick.

Add the ground beef, fresh parsley, nutmeg powder, black pepper, and salt. Cook, stirring often, until the beef reaches 71°C (160°F) and the mixture is very thick and holds its shape.

Spread the ragout onto a tray or shallow dish and let it cool completely, then chill until firm.

Shape the chilled ragout into croquettes. Roll each one in flour, dip it into the beaten eggs, and cover it with the breadcrumbs.

Heat the vegetable oil to 180°C (350°F). Fry the croquettes in batches until deep golden and crisp and the center reaches 74°C (165°F).

Drain briefly on paper and serve hot with mustard.
