Method

    Mix the all-purpose flour with the salt in a bowl. Add the water and knead until smooth, then cover and rest until supple.

    Combine the ground chicken, green cabbage, onion, the garlic, the fresh ginger, cumin powder, black pepper, fresh coriander, and salt. Mix until the filling looks sticky and evenly seasoned.

    Cook the tomato in a small pan until softened, then mash it with the sesame seeds, green chili, the garlic, the fresh ginger, lime juice, salt, and fresh coriander. Stir in the mustard oil to finish.

    Divide the dough into small pieces and roll each piece into a thin round.

    Place a spoonful of the filling in the center of each round, pleat the edges, and seal the dumplings tightly.

    Pour the water into the steamer base and bring it to a boil at 100°C (212°F).

    Arrange the dumplings in the steamer basket and steam until the wrappers are glossy and the ground chicken filling reaches 74°C (165°F).

    Serve the dumplings hot with the tomato sesame sauce alongside.
