    Heat the coconut oil in a wide pot over medium heat. Add the onion and cook until softened, then stir in the garlic.

    Pour in the coconut milk and water and bring the liquid to a gentle simmer at about 90°C (195°F).

    Add the mud crabs, cover, and cook until the shells are bright, the meat is opaque, and the thickest part reaches 63°C (145°F).
