Method

Crush the marula fruit in a clean pot and add the water.

Bring to a boil, then simmer until the fruit is soft and the liquid is fragrant.

Strain through a fine sieve, pressing the fruit gently. Stir in the white sugar while warm, if using.

Add the lemon juice, cool promptly, and refrigerate to 4°C (40°F). Serve chilled within 2 days.
