    Rice Noodles (rinsed)

    Scallion (finely chopped)
  • 20g
    Fresh Coriander (roughly chopped)
  • 50g
    Peanuts (coarsely crushed)

    Heat the vegetable oil in a pan over medium heat. Add the onion and cook until soft.

    Add the garlic and cook until fragrant.

    Add the ground pork and cook, breaking it up with a spoon, until browned and at least 71°C (160°F).

    Stir in the tomato and cook until it collapses into a light sauce.

    Add the soy sauce, rice vinegar, white sugar, chili powder, and water. Simmer until the sauce is savory and slightly loose. Season with the salt.

    Soak the rice noodles in warm water until pliable, then cook briefly until tender. Drain well.

    Divide the noodles among bowls and spoon over the pork and tomato sauce.

    Scatter the scallion, fresh coriander, and peanuts over each bowl before serving.
