    Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until soft.

    Add the garlic, fresh ginger, curry powder, and turmeric powder, and cook until fragrant.

    Add the chicken thigh and stir until the outside loses its raw color.

    Pour in the water and bring to a gentle simmer. Cook until the chicken is tender.
