    Garlic (crushed)
  • 40ml
    Lemon Juice
  • 20ml
    Distilled White Vinegar

    Combine the piri piri chili, garlic, lemon juice, distilled white vinegar, paprika, salt, and vegetable oil into a smooth paste.

    Rub the chicken all over with the marinade, including under any loose skin, and let it marinate.

    Preheat the oven to 200°C (400°F).

    Place the chicken on a roasting tray and roast until browned and the thickest part of the breast and thigh reaches 74°C (165°F).

    Increase the oven to 230°C (445°F) for the final few minutes, watching closely so the marinade does not burn.
