    Cowpeas Peas (soaked and drained)

Soaking

  • 400ml
    Water

    Onion (finely chopped)
  • 10g
    Garlic (crushed)

    Piri Piri Chili (finely chopped)

    Vegetable Oil

    Soak the cowpeas in the water until they soften, then drain them well.

    Blend or mash the soaked cowpeas with the onion, garlic, and piri piri chili until you have a thick, slightly coarse batter.

    Mix in the salt and beat the batter briefly so it becomes a little lighter.

    Heat the vegetable oil to 180°C (350°F).

    Drop spoonfuls of batter into the hot oil and fry until puffed and golden, turning as needed for even color.
