Salad
- 600gEggplant
- 350gTomato (finely chopped)
- 15gGarlic (crushed)
- 50mlExtra Virgin Olive Oil
- 4gPaprika
- 4gCumin Powder

Method

Heat the oven to 220°C (425°F). Prick the eggplant all over, place it on a tray, and roast until completely soft and collapsed.

When cool enough to handle, scoop out the flesh of the eggplant and mash it roughly.

Heat the extra virgin olive oil in a wide pan over medium heat. Add the tomato and garlic and cook until the tomatoes reduce and lose their raw taste.

Stir in the paprika, cumin powder, salt, and black pepper.

Add the mashed eggplant and cook, stirring often, until the mixture is thick and spreadable.

Stir in the lemon juice.

Transfer to a serving dish and scatter over the fresh coriander.
